The workspaces are where you insert your blocks and notes. I recommend that you not only create a single workspace but more because too many blocks and notes in a single workspace can crash your PC or get confusing for you. All workspaces will be executed by your bot, don't worry. Blocks are responsible for the functionality of your bot. Notes are elements whose purpose is to organize your workspace.
